Canopy Point seeks out relationships with small family-farmer co-ops and individuals that prioritize producing specialty-grade Arabica coffees, use sustainable and responsible growing practices, and invest in the needy in their local communities.
Our growers are guaranteed a minimum price that is significantly higher than the market and are paid a premium based on cupping score. This approach is the foundation of our mission, Brewing Compassion—using coffee business as a vehicle for compassionate projects.
We are currently working with and supporting small coffee growers in Guatemala, Honduras, and Oaxaca, Mexico, regions renown worldwide for producing an excellent cup of coffee. The typical size of the coffee farms are 2 to 5 hectares and have been cultivated by their families for generations. Our coffees are not blends made from several countries but are Single Origin estate coffee, allowing the unique qualities of each region to shine through.

Air Roasting
At Canopy Point, we roast our coffees in-house. We have partnered with Air-Motion Roasters to supply a unique and innovative roasting method, called fluidized bed or air roasting. These roasters use hot air to gently agitate the coffee beans and bring them to the precise degree of roast. Since they use electricity as a heat source, the roasted coffee flavors are not affected by the burnt and over-roasted flavors that are associated with traditional gas-fired roasters. This allows the subtle, sweet flavors of the coffees to naturally shine through while using a renewable energy source rather than fossil fuels.

Air Roasting
Our Coffees are air roasted in-house by Canopy Point. You taste air roasted coffee, not the roaster's odor, fuel, chaff, and smoke. This enables air roasted coffee to exhibit the full flavor profile of the coffee. With air roasted coffee, you taste the coffee, not the roaster. Conventional roasters add acidic flavors and bitter tars because of the excess dust and chaff is roasted along with coffee. But those elements are removed during air roasting, ensuring a clean taste that is intensely aromatic.

Our mission, Brewing Compassion, is built on this strategy: leveraging the coffee industry as a vehicle for charitable endeavors.
Environmentally Conscious
Traditional roasting produces air pollutants, but air roasting generates much lower concentrations. Not only does air roasting enhance the flavors of the coffee, but air roasting has 80% less emissions than traditional roasting. Skyside, an accredited 3rd party lab, that specializes in emission and environmental testing, evaluated the number of pollutants in the exhaust stream of the Air-Motion Roaster. The emissions test concluded there were far lower concentrations of pollutants emitted to the atmosphere, certainly below the limits for comparable processes.
Top Cupping Scores
At Canopy Point we strive to roast the best quality coffee in the world and that starts with sourcing the best coffee on the planet. Each coffee farm is thoughtfully selected by the Canopy Point team. We only source high altitude, shade grown Arabica coffee. We choose the best coffees in the world by only sourcing beans with an average cupping score of 86 or higher. All coffee that comes to us is picked by human hands, at peak ripeness.
